I cut the recipe in half and I only used 1 package of spinach (and I wished I had cut that down) and instead of brick cheese, I used Monterrey jack. I also used canned mushrooms instead of fresh because I had that on hand. The recipe was delicious and could be eaten as a meal, by itself. I'm going to post about this casserole and a tortellini soup (that I plan to make this week) soon. I have never cooked with tortellini before, but I plan to find to find many more recipes with it. J.
